Chilli beef & cashew stir-fry
1.Heat a wok or large frying pan on high. Add cashews and toss for 1-2 minutes until golden. Transfer to a plate.
2.In same wok, heat oil on high. Stir-fry beef in 2 batches for 3-4 minutes each until sealed and browned. Transfer to a bowl.
3.Add vegetable mix to wokand stir-fry for 2-3 minutes.
4.Return beef to wok with noodles and chilli jam. Stir-fry for 2-3 minutes until hot. Serve sprinkled with spring onions and cashews.
✦ Prepare fresh noodles by placing in a colander, in a bowl, and pouring over hot water. Set aside for 1-2 minutes and use chopsticks to separate strands, then drain.
Note
