Name: Cheat’s orange honey syrup cake

Ingredients: 1/2 cup unsalted pistachios, roughly chopped; 1/2 cup honey; 2 oranges, juice; 1 prepared 20 cm round sponge cake; thick cinnamon yoghurt, to serve

1/2 cup unsalted pistachios, roughly chopped

1/2 cup honey

2 oranges, juice

1 prepared 20 cm round sponge cake

thick cinnamon yoghurt, to serve

Method

1.Place nuts in a medium frying pan on medium heat. Toast 1-2 minutes. tossing occasionally, until fragrant. Add honey and juice, stirring until smooth and syrupy.

2.Meanwhile, cover cake in plastic wrap. Microwave on medium (50 per cent power) 1-2 minutes, until warm. Discard plastic and transfer cake to serving plate.

3.Use a small knife to make small holes all over the surface of cake. Drizzle hot nut syrup over. Serve with dollops of yoghurt.
