Method
1.Sift flour and baking powder together into a large bowl. Make a well in the centre of the dry ingredients.
2.In a jug, whisk together yoghurt, egg and spice. Mix into dry ingredients until well-combined. Batter should still be slightly lumpy.
3.Heat a large non-stick frying pan on medium. Lightly spray with oil. Spoon tablespoonfuls of batter, in batches, into pan.
4.Cook 1-2 minutes, until bubbles appear. Turn and cook further 1-2 minutes, until golden and cooked through. Transfer to a plate and keep warm. Repeat with oil and remaining batter.
5.Serve pikelets warm, topped with berries and drizzled with maple syrup.
Try this recipe with other flavoured yoghurt, and serve with an extra spoonful on the side.
