1.Preheat the oven to 200°C. Lightly grease a 12-hole Texas muffin pan.
2.Sift the dry ingredients into a large bowl. Whisk the eggs and milk in another bowl, until well combined. Melt the butter and set it aside to cool a little.
3.Add the diced bacon and spinach to the dry ingredients and coat them with the flour mixture. Make a well in the centre and add the egg mixture and the melted butter. Fold everything together using a strong spoon.
4.Place a large dollop of the mixture into a prepared muffin hole. Add a piece of cream cheese and a teaspoon of relish (or similar) then cover them with more muffin mixture. Repeat until all the ingredients are used. Bake the muffins in the preheated oven for 20-25 minutes.
