Method

1.In a large bowl, combine rice, zucchini, breadcrumbs, egg, mint, green onions, and season to taste. Divide mixture into 12 portions and shape into round cake.
2.Heat olive oil in a large frying pan. Cook cakes for 2-3 minutes each side, until heated through and golden. drain on paper towel. Serve with leaves.
