Easy cheesy bread

If you’re wary about making bread because of the time required to rise the dough, try this non-yeasted bread. It’s quick and easy to throw together, and tastes delicious with a generous layer of berry jam.

Ingredients

  • 3/4 cup unsweetened yoghurt
  • 1 egg
  • 50 gram butter, melted
  • 2 cup high-grade flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 100 gram grated or crumbled tasty cheese (parmesan, blue vein, cheddar, feta)
  • milk or water, to brush
  • salt to sprinkle
  • butter and fruit jam, to serve

Method

    Preheat oven to 180°C. Line a loaf tin with baking paper. Grease the bottom and sides of the tin.

    Beat the yoghurt, egg and melted butter together.

    Sift the flour, baking powder and salt into a large bowl. Add the cheese and combine. Pour in the yoghurt mix, then stir until just combined.

    Spoon into the loaf tin and smooth the top with the back of a moistened spoon. Brush with milk or water, then sprinkle with salt.

    Bake for about 45 minutes, then turn out and cook on a wire rack for a further 15 minutes, or until the bread sounds hollow when knocked.

    Serve cut into thick slices with lashings of butter and jam. The loaf can be eaten hot or cold.

Notes

Always use high-grade flour when making bread. It has a higher gluten content, which is important for achieving a decent and stable rise for your dough. Try cheese bread served with warm jam. It's sweet, salty and delicious!
