Chicken, rice and bean burritos
Prepare these delicious Mexican burritos for your family for a fun, quick weeknight dinner. Your diners will enjoy assembling their own dinner, combining a tasty chicken, rice and bean mix with grated cheese and fresh vegetables on a light tortilla.

Ingredients
Chicken, rice and bean burritos
- 1 tablespoon olive oil
- 1 red onion, sliced
- 30 gram packet taco spice mix
- 1/2 barbecued chicken, shredded
- 400 gram can four bean mix, drained, rinsed
- 250 gram packet microwave longrain white rice
- 8 regular tortillas, heated
- 2 cup shredded iceberg lettuce
- 1/2 cup shredded cheese
- 1 tomato, finely chopped
- coriander leaves, to serve
- taco sauce, to serve
Method
Chicken, rice and bean burritos
- 1Heat oil in a large frying pan on medium. Saute onion 3-4 minutes. Add spice mix. Cook 1 minute, stirring, until fragrant. Add chicken and beans.
- 2Prepare rice following packet instructions. Add to chicken mixture. Cook 2-3 minutes, until heated through. Season to taste.
- 3Fill tortillas with lettuce, chicken mixture, cheese and tomato. Top with coriander and taco sauce. Fold in ends and roll up. Cut in half to serve.
Notes
To make a vegetarian version of this recipe, replace the chicken with a jar of chopped char-grilled vegetables or sauteed mushrooms.
