Barbecue sauce
Chicken filo parcels
Method
1.To make the barbecue sauce, heat the oil in a saucepan and gently cook the onion and garlic until they are soft. Add the rest of the sauce ingredients and simmer for 5 minutes.
2.Stir in the broccoli florets and cooked chicken. Simmer gently until the broccoli is tender, then add the cooked carrots. Mix the cornflour and water together and add it to the sauce, stirring gently until it has thickened. Remove the pan from the heat and set it aside.
3.Preheat the oven to 210°C. Lightly brush one sheet of filo pastry with oil and fold it in half lengthwise. Brush again with a scant coating of oil and place a serving spoonful of the chicken mixture at one end. Roll it over a couple of times, then fold the edges in to form a parcel and continue rolling the parcel over until it is completely enclosed. Place with the join underneath on a greased oven tray. Repeat until all the mixture has been used.
4.Brush the parcels lightly with oil and bake for approximately 25 minutes, or until they are a dark golden brown. Serve hot with vegetables, rice or a salad.
