Method
1.Heat butter in large saucepan. Stir onion, garlic and bacon over heat until onion softens.
2.Add flour and continue stirring until mixture thickens and bubbles. Gradually add stock and milk; stir until mixture boils and thickens.
3.Stir in potato; return to the boil. Reduce heat; simmer, covered, about 20 minutes or until potato softens. Stir in cream and chives.
