Method

1.Place beans in a medium bowl, cover with water; stand overnight. Drain.
2.Combine beans, the water, coarsely chopped onion, garlic, bay leaf and chilli in a large saucepan; bring to the boil. Reduce heat; simmer, covered, for 1 hour or until beans are tender.
3.Drain bean mixture over a heatproof bowl; discard bay leaf; reserve ½ cup of cooking liquid. Blend or process bean mixture with reserved cooking liquid until coarsely mashed.
4.Heat oil in a large frying pan over medium heat; cook finely chopped onion, stirring, for 5 minutes or until onion softens. Add tomato; cook, stirring, until tomato softens. Stir in bean mixture; cook, stirring, over low heat, for 10 minutes or until thickened; season.
