Method
1.Boil, steam or microwave the potatoes until just tender; drain.
2.In a large non-stick frying pan, heat oil over high heat. Add potatoes and cook, stirring occasionally, for 10 minutes or until browned. Add mustard seeds and cook, stirring, for 30 seconds or until the seeds pop. Reduce the heat to medium; add cumin seeds and garlic, and cook, stirring, for 1 minute or until aromatic. Remove potato mixture from pan.
3.Add spinach to same pan; cook, covered, stirring occasionally, until spinach is wilted.
