Pan cooked pumpkin

This flavoursome side dish ticks all the boxes, featuring wholesome pumpkin simmered with crispy bacon, butter and garlic.

Ingredients

Method

1.Melt 10g of the butter in a large frying pan; cook bacon and garlic until browned lightly. Remove from pan; drain on absorbent paper.
2.In the same cleaned pan, add boiling water and pumpkin; cover and cook about 10 minutes or until the pumpkin is just tender and the water is almost evaporated. Return bacon mixture and remaining butter to the pan; cook, uncovered over a medium heat, for about 10 minutes, stirring occasionally. Add green onions and season to taste with salt and pepper; toss gently.

Not suitable to freeze. Not suitable to microwave.
