1.In a saucepan of salted boiling water, cook potatoes 10-15 minutes, until almost tender. Drain well, cool and cut into thick slices.
2.Heat oil on a barbecue plate on medium. Cook potato 5-6 minutes, turning occasionally, until golden brown. Sprinkle with cheese and chilli and cook for 1-2 minutes, until golden and crisp. Season to taste and garnish with parsley.
