Ingredients

Method

1.In a saucepan, combine vinegar, sugar, salt, peppercorns and water. Bring to the boil. Reduce heat; simmer 5 minutes.
2.Add zucchini and onion. Bring to the boil, stirring. Remove from heat.
3.Divide zucchini between sterilised jars. Pour over vinegar.
4.Seal in jars and store for several months in refrigerator.
