1.Preheat oven to 180°C. Line an oven tray with baking paper. Spread sugar over tray. Bake for 4-5 minutes, until heated through.
2.Combine tomatoes, capsicum, chillies and garlic in a heavy-based saucepan. Stir in vinegar and salt. Heat on high and boil for 4- 5 minutes, stirring occasionally. Remove from heat.
3.Add sugar and jamsetta to tomato mixture, stirring until dissolved. Return to heat and bring to a rolling boil on medium. Cook for 15-20 minutes, until setting point is reached. Cool for 5 minutes. Pour into warm sterilised jars and seal.
A layer of foam will form on the surface during cooking of jams. Simply skim off with a metal spoon and discard.
