Tomato-baked meatballs

Hearty, warming and utterly delicious, these tender beef meatballs are baked in a beautiful tomato sauce and served with rice and peas to create a nutritious dinner dish in no time at all.

Method

1.Preheat oven to 200°C (180°C fan-forced). Grease a 2-litre (8-cup) shallow ovenproof dish. Place on a baking tray.
2.Spray meatballs with oil. Heat a large frying pan over moderate heat. Add meatballs. Cook, turning, 2 minutes or until browned. Transfer to prepared dish.
3.Combine crumbled stock cube and 3/4 cup boiling water in a jug. Stir in passata. Pour passata mixture over meatballs in dish. Sprinkle with cheese. Bake 18-20 minutes, or until golden and bubbling.
4.Meanwhile, prepare rice as packet directs. Stir in peas, spread and parsley. Season. Serve meatballs with rice.

You could use 2 x 400g cans diced tomato instead of passata.
