Method
1.Using small skewers, thread a tomato, followed by a basil leaf, a piece of feta, another basil leaf and finish with another tomato until all the ingredients are used up.
2.Serve the skewers drizzled with the olive oil and a squeeze of the lemon juice accompanied by a bowl of basil pesto and toasted slices of bread.
To help slide the cheese onto the skewers, rub the skewers with a little olive oil.
