Method

1.In a bowl, mix the flour and baking powder. Add the cider vinegar and enough iced water (start with ¼ cup) to make a smooth, thick batter (more of a paste). Set aside for 15 minutes while you prepare the apples.
2.Mix the cinnamon and sugar in a deep bowl.
3.Peel and slice each apple into 4-5 slices.
4.Heat enough oil in a small saucepan to deep-fry. Add a small drop of batter and when it is golden, the oil is hot enough.
5.Dip each apple slice in the batter (spread it over with a spoon if you need to) and gently lower into the hot oil. Cook until golden brown. Shake off the excess oil and drop into the sugar/cinnamon bowl, tossing to coat. Repeat with all slices.
6.Keep warm in the oven or eat immediately!
  • Coring the apples isn’t necessary in this recipe, but if you fancy fritters with a hole in them, feel free!
