Method
1.Heat oil in a wok or large frying pan on high. Stir-fry mince 4-5 minutes, breaking up lumps, until browned. Add ginger, garlic and chilli. Stir-fry 1 minute. Stir pineapple, carrot and capsicum through. Stir-fry 2-3 minutes.
2.In a small jug, combine all ingredients. Stir until sugar dissolves. Add sauce to wok and bring to simmer. Cook, stirring, 3-4 minutes.
To vary this dish, you could replace the pork mince with chicken or turkey mince.
