Method
1.Combine mince, breadcrumbs, curry paste and egg in a bowl, mixing well. Shape into 4 patties, about 1.5cm thick.
2.Preheat a barbecue plate or chargrill to medium. Place yogurt and mint in a food processor and process until mint is finely chopped. Season to taste and transfer to a bowl.
3.Brush barbecue plate or chargrill with a little oil and cook patties for 3-4 minutes each side, until cooked through (see tip). Toast hamburger rolls each side, until golden brown.
4.Top roll bases with a lettuce leaf, a patty and sliced tomato. Drizzle with mint yogurt and serve immediately.
Chill patties for 5-10 minutes before cooking. Ensure that patties are not pink in centre, as uncooked mince may contain bacteria.
