Spice mix

Method

1.In a serving bowl, combine yoghurt and coriander. Season to taste. Set aside until required.
2.Spice mix: In a small bowl, combine all ingredients, mixing well.
3.Spread 2 tablespoons of spice mix on a plate. Dust each cutlet in mix.
4.Heat oil in a large frying pan on medium heat. Cook cutlets for 2-3 minutes each side or until cooked to your liking. Serve with yoghurt, chutney and green salad.

Spice mix will keep in an airtight container for 2-3 months. This is also delicious using trimmed short loin chops.
