Make your next meal a flavorful affair with this delicious soba noodle salad recipe. Packed with colourful veges and served with chilli jam chicken, this dish makes a delicious lunch or dinner
1.Preheat oven to hot, 200°C. Lightly grease and line an oven tray.
2.In a large, non-metallic bowl, whisk chilli sauce, rice wine vinegar, Shaoxing wine and sesame oil together. Add chicken, tossing to coat. Arrange on tray. Bake for 35-45 minutes until caramelised and cooked through.
3.Cook soba noodles following packet instructions. Refresh in cold water, drain and toss with a little oil to prevent sticking. Place in a large bowl.
4.Add edamame, capsicum, peas, carrot, cucumber and onion. In a jug, whisk dressing and lime juice together. Toss through salad.
5.Serve chicken legs on a bed of noodle salad, scattered with mint.
