Smoked hoki chowder

This wonderfully comforting smoked hoki chowder recipe is perfect enjoyed for a filling weeknight meal during the cold winter months. Serve with toasted, buttery ciabatta

Method

1.Parboil the potatoes in a saucepan of water for about 5 minutes until they are just soft. Drain and set aside.
2.Heat the butter in a large saucepan. Add the bacon, onion and leek and sauté until they are cooked. Stir in the flour.
3.Add the milk and the fish stock. Stir until combined. The mixture will be very thick but will thin when the frozen fish is added. Take care the mixture doesn’t catch on the bottom of the saucepan.
4.Bring the mixture to the boil. Add the potatoes, thyme and the fish chunks. Simmer for 10 minutes, or until the potatoes and fish are cooked. Garnish with the extra thyme and serve with ciabatta bread.
  • You can add some frozen prawns towards the end of cooking the potatoes and fish. Cook the prawns until they turn pink.
