Sea urchin roe, avocado and beach flowers

Ingredients

Method

1.Slice avocado into 6 pieces; place onto spoon.
2.Using two teaspoons at the mouth of the urchin pry open revealing the meat and roe. Carefully remove the roe; place into bowl of cold water.
3.Once clean, remove roe from water and onto a paper towel to drain; place on top of the avocado.
4.Garnish with alyssum and sea rocket flowers. Drizzle with olive oil and a little squeeze of lemon juice.

You could use salmon roe in place of the sea urchin roe, if preferred. You could use watercress of rocket in place of the sea rocket flowers, if preferred. Any edible flowers can be used to garnish this dish.
