Method

1.Preheat the oven to 180ºC.
2.Cube the FreshZone kumara, leaving the skins on. Combine the olive oil, garlic, rosemary, cumin and mustard seeds. Place the FreshZone Kumara cubes in a roasting dish and toss through the olive oil mixture. Season with salt and pepper.
3.Bake the FreshZone Kumara in the preheated oven for 30 minutes, or until the kumara is golden and tender. Set aside to cool.
4.Combine the dressing ingredients and stir through the cooled FreshZone Kumara.
