Method

1.In a large saucepan, combine stock, soy sauce, mirin, wine, shiitake, lime juice, fish sauce and sugar. Bring to the boil. Simmer, covered, for 20 minutes until mushrooms are tender. Keep warm.
2.Pork and prawn dumplings: In a food processor, pulse prawns, sausage meat, ginger, garlic, sesame oil and togarashi until a paste is formed. Place wonton wrappers on a clean surface. Spoon 2 teaspoons mixture on each. Brush edges with a little water and pinch together to seal.
3.Cook noodles following packet instructions, adding broccolini in final minute of cooking. Drain and refresh.
4.Bring soup to a simmer on medium heat. Add wontons and simmer for 4-5 minutes until cooked through. Serve soup over noodles and broccolini. Top with shredded spring onion and sliced red chilli. Accompany with eggs.
