Ingredients

Method

1.Heat wok on high. Add oil, swirling to coat. Add laksa paste and stir-fry for 1 minute, until aromatic. Add stock and bring to boil.
2.Reduce heat to medium. Add turkey to stock, ensuring it is submerged. Simmer gently for 15 minutes. Using a slotted spoon, transfer to a board. Slice thinly.
3.Mix coconut milk into stock with tamarind, sugar, sauce and lime leaves. Simmer, stirring, for 1-2 minutes. Add buk choy and simmer for 1-2 minutes.
4.Divide noodles and turkey between serving bowls. Ladle hot soup over.
5.Serve topped with coriander, shallots and chilli. Accompany with lime wedges.

Tamarind concentrate or tamarind pulp can be bought from Asian grocers or speciality food stores. Prepare noodles following packet instructions.
