Ingredients

3 cup cornflakes

2 cup puffed rice cereal

1/2 cup salted peanuts, chopped, plus 1/2 cup extra

1/3 cup firmly packed brown sugar

1 tablespoon golden syrup

100 gram butter, chopped

Method

1.Preheat oven to 150°C/130°C fan-forced. Place 18 paper cases on a large baking tray. Combine cornflakes, rice cereal and peanuts in a bowl.

2.Place sugar, golden syrup and butter in a small saucepan over low heat. Cook, stirring until sugar dissolves and butter has melted.

3.Pour butter mixture over cornflake mixture; stir until well combined. Spoon into paper cases. Top each with a few extra peanuts. Bake for 10 minutes. Cool.

Makes 18 To make extra-stable paper cases, stack 2 together, one inside the other, then fill. Make ahead: Bake golden joys up to 3 days ahead. Store in an airtight container.
