Method

1.Preheat oven to moderate, 180°C. Line 2 x 12-hole muffins pans with patty cases.
2.In a large bowl, using electric mixer, beat all ingredients together. Increase speed and beat 2-3 minutes, until mixture is pale and creamy.
3.Spoon into cases until two-thirds full. Bake 15 -20 minutes, until cooked when tested.
4.Meanwhile to make buttercream; in a medium bowl, using an electric mixer, beat butter until very pale. Gradually beat in icing sugar and milk alternately. Beat in vanilla.
5.Cool in pan 5 minutes before turning onto a wire rack to cool completely.
6.Spread icing over cold cakes. Decorate with icing flowers.

This is a foolproof recipe for children or those who don’t like washing up!
