Ingredients: Buttercream; 200 gram chopped, butter at room temperature; 3 cup icing sugar; 1/4 cup milk; 2 teaspoon vanilla extract; 2 1/2 cup self-raising flour, sifted; 250 gram butter, chopped, at room temperature; 1 1/4 cup caster sugar; 4 eggs; 3/4 cup milk; 2 teaspoon vanilla extract; icing flowers, to decorate

Buttercream

200 gram chopped, butter at room temperature

3 cup icing sugar

1/4 cup milk

2 teaspoon vanilla extract

2 1/2 cup self-raising flour, sifted

250 gram butter, chopped, at room temperature

1 1/4 cup caster sugar

4 eggs

3/4 cup milk

2 teaspoon vanilla extract

icing flowers, to decorate

Method

1.Preheat oven to moderate, 180°C. Line 2 x 12-hole muffins pans with patty cases.

2.In a large bowl, using electric mixer, beat all ingredients together. Increase speed and beat 2-3 minutes, until mixture is pale and creamy.

3.Spoon into cases until two-thirds full. Bake 15 -20 minutes, until cooked when tested.

4.Meanwhile to make buttercream; in a medium bowl, using an electric mixer, beat butter until very pale. Gradually beat in icing sugar and milk alternately. Beat in vanilla.

5.Cool in pan 5 minutes before turning onto a wire rack to cool completely.

6.Spread icing over cold cakes. Decorate with icing flowers.
