Method
1.Heat an oiled wok or large frying pan on high. Add mince. Cook for 4-5 minutes, breaking up mince with the back of a spoon as it browns. Transfer to a bowl.
2.Heat half the oil in the wok on high. Add eggs, swirling to coat the wok’s base. Cook for 1 minute or until set. Flip and cook for another minute. Remove from wok. Roll up and slice thinly. Set aside.
3.Heat remaining oil in same wok on high. Add broccolini, bacon and capsicum. Stir-fry for 2-3 minutes, until tender. Add peas and onion. Stir-fry for 1-2 minutes.
4.Return mince to wok with rice, sauces, sambal oelek and shrimp paste . Stir-fry for 2-3 minutes, until rice is hot. Serve topped with omelette and fried shallots.
Shrimp paste is sold in Asian food stores. Look for fried shallots and sambal oelek in the Asian section of supermarkets.
