1.Muddle the mint in the bottom of a highball glass along with lime juice and elderflower liqueur. Add the gin, top up glass with crushed ice, then fill with Champagne.
2.With a long spoon (preferably a bar spoon) pull the mint up the glass and stir to combine.
Respect your elders – make your own elderflower liqueur by combining 1 part elderflower cordial (readily available at supermarkets), 2 parts gin and 3 parts water. Stir to combine and keep in the fridge. It will last for at least 1 month. If you are without an ice crusher, simply lay a tea towel flat and put a pile of ice in the middle. Fold up the corners to make a bundle and secure with a rubber band. Hold by the tie and hit a hard surface, or hit the bundle with a mallet.
