Method
1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.Finely chop mushroom stalks. In a medium frying pan, melt butter on high. Sauté stalks and bacon for 8-10 minutes until bacon is crisp. Remove from heat. Mix in blue cheese and onion.
3.Place mushroom cups on tray. Spray with olive oil. Divide bacon mixture evenly between mushrooms and sprinkle each with parmesan. Bake for 12-15 minutes until mushrooms are tender.
4.Spread bun bases with aioli. Top with rocket, mushrooms and a dollop of chutney. Finish with bun lids.
Note
- For a vegetarian version, replace bacon with 1 chopped leek or ½ cup finely diced pumpkin. – Add some cooked and halved chipolata sausages, if desired.
