Sweet, sticky and tender, this tasty maple glazed pork is beautiful enjoyed sliced straight out of the oven with a side of steamed beans a sweet, homemade plum salsa.
1.Heat a frying pan on high. Brush pork with oil. Season to taste. Cook pork 8-10 minutes, turning on all sides, until well browned and cooked through.
2.Add syrup to pan. Cook, stirring, 1 minute, until sticky. Turn fillet to coat. Remove from pan to a plate. Cover loosely with foil. Rest 5 minutes.
3.To make salsa: in a large bowl, combine all ingredients. Season to taste.
4.Slice pork and serve with salsa. Accompany with steamed beans.
