1.Bring a large saucepan of salted water to a gentle simmer, on medium heat. Cook potatoes 15-20 minutes, until tender. Drain.
2.Meanwhile, preheat a grill on high. Rub lamb chops with half of oil and lemon rind. Season to taste. Place in a shallow baking pan with tomatoes.
3.Cook under grill 6-8 minutes, turning once, until chops are browned and cooked to taste. Remove from grill, cover loosely with foil and set aside to rest.
4.Heat remaining oil in pan potatoes were cooked in on medium. Add garlic and potatoes and crush coarsely with a potato masher to split potato skins. Toss through rocket, cover and set aside for a few minutes, until rocket begins to wilt. Season to taste and serve with lamb chops and tomatoes.
Baby spinach leaves can be used instead of rocket.
