Iced avocado soup with cucumber and coriander

When the weather is hot, chilled soups are the way to go. This fresh and zesty recipe for avocado soup uses cucumber and lime for a summertime flavour.

Ingredients

Method

1.Combine all ingredients, except coriander and lime wedges, in a food processor or blender. Process until smooth. Season to taste.
2.Chill for least 2 hours. Serve sprinkled with coriander. Accompany with lime wedges.

Baby spinach could be used in place of parsley. Try finishing this with a little cream.
