Honey, cornflake and choc-chip cookies

Cornflakes are good for so much more than breakfast! This cookie recipe sees your favourite cereal combined with honey and choc-chips to create delicious little biscuits that are perfect for sharing

Method

1.Preheat oven to moderate, 180°C. Line 2 oven trays with baking paper.
2.In a large bowl, using an electric mixer, beat butter until pale and creamy. Beat in honey, then egg.
3.Fold in sifted combined flour and baking soda with the first measure of cornflakes and choc bits. Roll dough into 18 even-sized balls.
4.Roll balls in the second measure of cornflakes. Place on trays, leaving room for spreading. Flatten slightly with floured hands. Bake for 12-15 minutes until golden. Cool on a wire rack. Store in an airtight container.
  • You can freeze dough in an airtight container for up to one month.
