1.Push peach, kiwifruit, lettuce, mint, lime and cucumber through a juice extractor into a jug. (Make sure you add the lettuce and mint to the juicer in the middle of the order so the remaining ingredients help to push them through.)
2.Serve over crushed ice and topped with extra mint and peach wedges.
This juice can also be made in a blender. Add 1 cup (250ml) coconut water for a thinner consistency.
