Method
1.In a large heavy-based saucepan, combine sugar, berries, water, juice, jam setter and liqueur. Bring to boil on low, stirring, to dissolve sugar.
2.Simmer, without stirring, 25-30 minutes, until jam reaches setting point. Skim off any scum that forms on surface. Stir in extra strawberries and vanilla.
3.Spoon into warm sterilised jars. Seal and label.
Sterilise jars and lids by washing in hot soapy water rinsing and placing on an oven tray. Dry in a preheated very slow oven, 120°C, 10 minutes.
