Goats’ cheese log with crudités

This scrumptious Goats’ cheese log with crudités is perfect for entertaining dinner guests.

Ingredients

125 gram cream cheese (for diabetes friendly, use low-fat cream cheese)

100 gram soft goats’ cheese

1 tablespoon lemon zest

1 tablespoon chopped fresh herbs

1 teaspoon coloured peppercorns, roughly chopped

assorted crudités, eg, radishes, baby carrots, snow peas, crackers etc, to serve

Method

1.Place the cream cheese, goats’ cheese, garlic and half the lemon zest in a food processor and blend well. Shape the mixture into a log.

2.Combine the remaining lemon zest, chopped herbs and crushed peppercorns on a board and roll the log in the mixture. Wrap in plastic wrap and chill for 1 hour before serving on a platter with crudités.
