Ingredients
Method
Line 4 oven trays with baking paper.
In a medium saucepan, combine sugar and water on low, stirring until sugar has dissolved.
Increase heat to medium and simmer without stirring for 5 minutes until the mixture is reduced and syrupy. Add a few drops of blue food colouring and swirl to combine. Add 2 cups plain popped popcorn and stir with a wooden spoon until completely covered. Spread popcorn on tray to cool.
Repeat 3 more times using the red, yellow and green food colouring.
Note
- Stirring syrup after boiling causes crystallisation.
Top tip
- If you’re pressed for time, use a bag of pre-popped popcorn. However, if you have some extra time to spare, pop your own popcorn kernels for a full DIY experience.
This rainbow unicorn popcorn recipe is also a great way to add some extra fun to any regular popcorn dessert such as these Chocolate tarts with peanut toffee and popcorn.
