Decadent lemon and mint hummus
Method
1.In processor pulse the bread to form crumbs, add the lamb mince, curry paste, mango chutney, garlic and ginger. Pulse to combine then roll into balls.
2.Thread the balls onto skewers and cook in a hot frying pan or on a well-oiled grill, in batches for 2-3 mins each side, turning carefully as they are fragile.
3.Make the dressing: combine the Yoplait Decadent Lemon Greek Style Yoghurt and hummus, mix in the mint and season with lemon juice if desired. Top with a drizzle of oil and a scattering of toasted cumin seeds if desired.
4.Serve the koftas on warmed flatbread, with the lettuce, sliced cucumber and tomato and a good drizzle of the dressing.
• The lamb mixture can be shaped into burgers and served in a bun with the hummus or serve as party nibbles rolling mini meatballs to serve with the lemon hummus for dipping. • Lemon hummus is delicious with other grilled or barbecued foods and can be used as a dip, dressing or topping.
