Method

1.Using a mandoline, slice the courgettes 1-1.5mm thick.
2.Fry in hot vegetable oil (160°C) until crisp and pale gold in colour. Remove from oil and drain.
3.Dress with garlic, balsamic and mint, season with salt and pepper and serve.
