Method
1.Place the chicken in a large container. Mix soy sauce and garlic together and pour over the chicken. Cover and marinate in the fridge for 2 hours.
2.Pour oil into a large saucepan and heat until hot. Remove marinated chicken from container, season with salt and pepper and gently place in hot oil. Cook chicken for 2–3 minutes on each side or until nicely browned.
3.Pour remaining marinade into pan with the chicken, add water and bring to boil. Add bay leaves and chilli, lower the heat and simmer for 30 minutes.
4.Add vinegar and sugar and cook for 10 minutes or so until sauce is thick.
5.Garnish with sliced chilli and spring onion. Serve with steamed rice and vegetables of your choice.
