1.Cut the beef into bite-sized pieces, then marinate in the garlic, ginger, sherry, spice and brown sugar for at least 30 minutes, longer if possible.
2.Arrange the beef on the soaked skewers, alternating with the colourful vegetables.
3.Spray the skewers with oil, then barbecue or grill for 3-4 minutes each side until coloured and cooked to your liking. Alternatively, put them on a lined oven tray and roast at 190oC for 8-10 minutes, turning once, until coloured and cooked.
4.Serve with chipotle mayonnaise. To make this, whiz the mayonnaise with the chipotle or capsicum, paprika, sugar and Worcestershire sauce. Season to taste.
