Method
1.Combine sugar, bourbon, soy sauce, ginger, garlic and five-spice in a large jug, stirring to dissolve sugar.
2.Place chicken wings into a large zip-lock bag. Pour in three-quarters of the marinade; reserve remaining marinade. Seal bag; massage marinade into chicken. Chill for 3 hours or overnight, to marinate.
3.Preheat oven to 200°C (180°C fan-forced). Line two oven trays with baking paper. Drain chicken from marinade and arrange on tray. Bake for 20 minutes.
4.Brush chicken with reserved marinade. Return to oven for a further 10-15 minutes, turning halfway, until dark golden and cooked through. Serve hot or cold with salad leaves.
