Ingredients: 440 gram canned whole baby beetroot (beets), drained, halved; 90 gram mesclun lettuce; 1 cup firmly packed fresh mint leaves; 250 gram bottled marinated feta in oil; 1 teaspoon balsamic vinegar; 1 teaspoon dijon mustard

Beetroot and feta salad

Sweet beetroot contrasts beautifully with sharp, salty feta and bitter leaves in this delicious salad. Perfect as a light lunch, or a side dish.

Ingredients

440 gram canned whole baby beetroot (beets), drained, halved

90 gram mesclun lettuce

1 cup firmly packed fresh mint leaves

250 gram bottled marinated feta in oil

1 teaspoon balsamic vinegar

1 teaspoon dijon mustard

Method

1.Combine beetroot, mesclun and mint in large bowl.

2.Drain feta, reserving 2 tablespoons of oil. Cut feta into small cubes; place in bowl with beetroot mixture.

3.Combine reserved oil with vinegar and mustard; drizzle over salad.
