Ingredients

Method

1.Place potato in a saucepan; cover with cold water. Bring to the boil; boil for 5 minutes. Add broccoli; boil for 5 minutes or until tender. Drain; return to pan.
2.Meanwhile, heat 2 teaspoons of the oil in a frying pan over high heat. Cook beef, in batches, for 2 minutes or until browned and cooked to your liking. Transfer to a plate. Cover with foil; rest for 5 minutes.
3.Heat remaining oil in same pan over moderate heat. Add tomato, garlic and anchovy; cook and stir for 2 minutes or until warm and fragrant.
4.Add potato and broccoli to pan, using the back of a fork to crush potato lightly. Cook and toss for 2 minutes or until crisp and heated.
5.Serve beef with potato mixture.
