Method
1.Heat oil in a large frying pan over moderate heat. Cook beef, in batches, 1-2 minutes or until seared. Transfer to a heatproof bowl.
2.Add onion to pan. Cook, stirring, 2-3 minutes or until soft. Return beef to pan. Add mushroom and wine. Cook, stirring, 8-10 minutes or until wine reduces, beef is cooked and mushrooms tender. Remove from heat. Stir in sour cream and parsley. Season.
3.Meanwhile, bring a large saucepan of salted water to the boil. Add pasta. Cook 8-10 minutes, or until tender. Drain.
4.Divide pasta among serving bowls. Top with stroganoff. Serve with salad.
Try using a selection of mushroom varieties. Recipe is best made just before serving.
