Banana bread

If the kids are curling their lips at those overripe bananas that have been sitting in the fruit bowl all week, you can still use them up in this moist and mouthwatering recipe that the little darlings will love!

Ingredients

Method

1.Preheat oven to moderate, 180°C. Lightly grease a 14 x 21cm loaf pan and line base and sides with baking paper.
2.In a medium bowl, using an electric mixer, beat sugar and butter together until light and fluffy. Beat in egg.
3.Stir in banana. Lightly fold in flour alternately with milk.
4.Spoon mixture into prepared pan. Bake for 1 1/2 hours, or until cooked when tested with a skewer. Cool on a wire rack. Serve with strawberries.

If the top of the cake begins to brown too much during cooking, cover loosely with foil. Skewer should be clean and dry when removed from cake.
