Method
1.Preheat oven to 200°C/400°F.
2.Remove and discard stems from mushrooms; place mushrooms, top-side down, on oven tray. Drizzle with dressing; sprinkle with thyme. Roast, uncovered, about 15 minutes.
3.Serve mushrooms sprinkled with cheese.
You can also use portobello mushrooms. Large, flat mushrooms have a rich earthy, full-bodied flavour and meaty texture, making them perfect for roasting and barbecuing. They are sometimes misnamed field mushrooms, which are wild mushrooms.
